National Archives MAF 68. These are the analysis sheets prepared from the original census forms. They give the statistics for each census parish. I will send you some photos so you can see what you are up against.

I agree, but due diligence has to be done in case someone is out there and proves to be difficult when they discover what we have done.

It would be interesting to see the hawthorns to see how mature they are. I don't think of Hawthorn as being particularly long lived, but that might be mistake.
Also the exact location to see whether the stockade has any presence on the map, contemporary ort historic. Is it on common land?

The literature is enormous. Much of it is contained in studies of individual monastic houses. I would suggest that you star with a good medieval economic history (so Chris Dyer, Making a living in the Middle Ages or Richard Britnell, Britain and Ireland 1050-1530.
