The Anglo-Saxon ploughmen image

The image used for the BAHS forums shows ploughmen with a couple of strange plough beasts. The Wikimedia commons description says 'Ploughmen.--Fac-simile of a Miniature in a mediaeval manuscript published by Shaw, with legend "God Spede þe plough, and send us korne enow." Note that "þe" should be transliterated "the". Project Gutenberg text 10940 Title: Manners, Custom and Dress During the Middle Ages and During the Renaissance Period'.

Does anyone know why the beasts have flat faces? They don't look like horse or ox faces.
